The main ingredient in a lemon poppy seed bread. Poppy seeds. Poppy seeds are much more than just a pretty decoration on your bagel or bun. They have a wonderful nutty flavor that tastes great in bread and cakes. Their flavor can pair well with both savory and sweet dishes.

Start by preheating your oven to 350 degrees F. Then grease 2 medium size loaf pans with cooking spray or butter.

When zesting, remove only the thin yellow layer of the rind. The white pith will add a very bitter flavor to the bread.

Mix your granulated sugar, evaporated milk, 2 eggs, lemon juice, lemon zest, oil, and vanilla extract.

Add the flour, salt, baking powder, and poppy seeds and mix until just combined. Bake for 45-50 minutes.

This recipe will make enough for two loaves. I used a traditional bread loaf pan and a more square-shaped pan for a shorter loaf.

Allow the bread to cool for about 30 minutes before removing from the pan.
I think this lemon poppy seed bread is perfect just the way it is without a glaze. However, if you prefer a sweeter dessert-like bread you can top the bread with a basic powdered sugar glaze. Simply whisk together 1 cup of powdered sugar with a couple of tablespoons of milk. Pour the glaze over the bread while still warm.

- 1 tsp Baking Powder
- 1/4 cup Poppy Seeds
Instructions
- Preheat oven to 350 degrees F. Grease 2 medium size loaf pans with cooking spray or butter.
- Mix together sugar, milk, eggs, lemon juice, zest, oil, and vanilla.
- In a separate bowl mix together the flour, salt, baking powder and poppy seeds.
- Add the dry ingredients to the wet ingredients and mix until just combined.
- Bake for 45 – 50 minutes or until a toothpick placed in the center comes out dry.
